Featured Coffee: Nomad Villa Rosita Lychee Process

Villa Rosita is a lychee process (anaerobic fermented) coffee from Colombia and roasted by Nomad in Spain. Their tasting notes are lychee, passionfruit, and yogurt. We chose to brew this coffee on the Aeropress + Disk, with a 1:15 ratio of coffee to water.

Our recipe:

18g coffee — medium-fine grind
270g water — just off boil

Regular (non-inverted) method
Brew time of 2:00

Tasting notes:

The power of suggestion is real, and it's impossible to know how much the descriptor "Lychee Process" influenced our tasting. That said — straight up lychee in this cup. In addition, we got a lot of citrus notes, like lemon and lime, and the finish was reminiscent of honeydew melon. Beneath the intense lychee and citrus flavors, there was also flavors of cream, and a bit of greenness — think green grape stems.

Our take:

One of the more interesting coffees we've tasted recently. Super sweet, with an incredible lychee aroma and flavor. We didn't necessarily love the hints of greenness in the cup, but the overall experience was undeniably delicious.
